La Regence restaurant at the King David Hotel hosted French Chef, Frédéric Simonin, as part of the Israel-France culinary week.

Parisian chef, Frédéric Simonin, one of 22 French chefs who came and participated in the French culinary week held in Israel, joined forces with the King David Hotel’s Chef, David Biton, in preparing a gourmet menu served as part of three special meals at the hotel’s La Regence restaurant.

Held for the fifth time in Israel, this culinary tradition entitled SO FRENCH, SO FOOD, requires the French chefs to cope with some difficult challenges. These challenges include cooking with unfamiliar local ingredients and adhering to kosher dietary laws, for example, not being able to use butter as an ingredient in a dessert, in a menu also serving meat.

However, Chef Simonin, who is the owner of a restaurant located in the 17th quarter of Paris with a prestigious Michelin star, is not at all bothered about such limitations or stresses, and actually emphasizes the importance of using local products in significant French dishes.

The collaboration with Chef David Biton yielded a six-course gourmet dinner, combining classic French cuisine with the requirements of a kosher kitchen. The appetizer – tuna tartare with mashed roasted tomatoes and egg Basque with black powdered garlic, the second course – red mullet with scales of garlic and a citrus sauce, the third course – roasted duck, foie gras, soft turnip & jasmine stock.

The main course – char-grilled lamb fillets, shallots filled with lamb’s neck, fava beans with celeriac, pre-dessert meringue served with Oriental sorbet and finally dessert – chocolate, pecan and olive oil and petit fours praline.

This is the third year that Chef David Biton has participated in this event and anticipates that some of the dishes may be integrated into the regular menu. Biton adds that, thanks to the project, the restaurant’s team is exposed to innovative work techniques.

Chef Biton says, “Today’s kitchens prefer to use high quality raw ingredients from completely different cuisines rather than compromise by using substitutes. This means ensuring that kosher food is also recognized under a gourmet label.”

French Ambassador to Israel, Hélène Le Gal, noted, “The French culinary week in Israel represents a sharing of tastes, cultures and expertise between French and Israeli chefs, as well as turning the spotlight every year to a specific region, this year Alsace, with its aromas and prized dishes.” D

This musical performance combined selected scenes from movies like Pretty Woman, Moonstruck, A Room with a View etc. whilst opera soloists together with the Jerusalem Symphony Orchestra performed, live on stage, the soundtracks of these movies.

In addition, guests were invited to a fascinating tour behind the scenes and a special meeting with soloists before the concert.

Classical music fans staying at the Dan Tel Aviv were delighted to discover they were invited to a unique musical event, a one-time concert with pianist Ching-Yun Hu, considered one of the world’s best pianists and winner of the prestigious Rubinstein Competition.

During the concert, she hosted the young Israeli pianist Andy Feldbau, an active personality in the international music industry who, in recent years, has participated in concertos with major national and international orchestras.

Guests staying at the hotel during the weekend enjoyed another surprise, Kabbalat Shabbat (welcoming the Sabbath) with singer Ella Rozner who performed excerpts from operas, operettas and musicals in a theatrical and humorous fashion.

Idit Zvi, Artistic Director of the Rubinstein Competition, conducted a master class and, together with radio and television personality Haim Keinan, submitted a program “behind the scenes of the competition”, combined with video clips and unique music, conducted a master class.

The sounds of music also reached the capital, where guests at the King David, Dan Jerusalem Dan Boutique Dan Panorama hotels in Jerusalem celebrated a weekend of music in collaboration with the Israel Camerata.

The agenda also included a series of concerts in the Spanish Music Festival, held at the YMCA, with participating artists from Spain. The festival incorporated compositions of composers Rodrigo, De Falla, zarzuelas, flamenco music and dance, Ladino romances etc.

As part of their vacation package, guests staying at Dan Jerusalem were offered tickets to the Jerusalem International Chamber Music Festival at the special rate of 100 shekels, for concerts held at the YMCA.

Members of the e-dan club were invited to a daily dress rehearsal in the morning, and every night after the concert, when the adrenaline reached its peak, enjoyed a brief meeting with the performing artists.

India’s most renowned chef, Sanjeev Kapoor, quickly agreed to the Dan Hotels invitation to stay and attend a week of Indian cuisine, initiated by the chain and in cooperation with the Indian Embassy to Israel.

Kapoor, who is currently the best ambassador of Indian food around the world owns several restaurants in India and abroad, his own TV channel dedicated to Indian cuisine and food programs in which he himself participates on a regular basis.

This is not the first time that the Dan Hotel chain has extended itself to offer its guests new and innovative tastes from the world of cuisine.

Last year the chain added a selection of exotic Thai dishes to hotel menus. In light of the growing interest in Indian cuisine, both in Israel and abroad, the chain came up with the initiative to hold an Indian cuisine week at the King David hotel.

“Every year we go to extreme efforts to excite Israeli taste buds”, says Haim Spiegel, Food and Beverage Department Manager at the Dan Hotel chain.

“This year it was evident that we would be directing our efforts towards Indian cuisine and the Indian mega-chef, who was quite surprised at our invitation, happily agreed to come along with his team, to cook at the King David”.

The chef arrived with his set of spices that accompany him on every trip and with great curiosity to learn about Israel and its food. Alongside his special spices, each meal he cooks is made of raw local materials.

“I visited the Carmel market and Machane Yehuda market,” says Chef Kapoor, “the local products are amazing and bring on the urge to cook.”

For an entire week Chef Kapoor joined forces with Chef David Biton, from the King David Hotel Jerusalem, and together they cooked and created authentic, kosher, Indian dishes that were added to the hotel’s La Regence restaurant menu as 3 special meals.

A cocktail party, held in honor of the famous Indian chef, was attended by officials of the Indian Embassy in Israel, management members and leading chefs of the Dan Hotel chain.

Raffi Sadeh, General Manager of Dan Hotels Israel said, “When I heard about the opportunity to join forces in a culinary project with the Indian Embassy, I immediately thought it was a superb idea. Especially given the fact that we are due to open our new hotel in the blooming city of Bangalore, India by the mid-2017, so naturally this project is one of mutual interest.”

Mango Murgh Makhani – pieces of grilled chicken served in tomato sauce with pieces of mango.

Nalli Rogan Josh – lamb cooked in a spicy masala sauce until it is extremely tender.

Dum Gosht Biryani – slow cooked succulent pieces of lamb chops with spices and basmati rice cooked in an Indian DUM, (Indian slow cooking utensil).

Beit Ticho The Historical Gem of Jerusalem

Beit Ticho is a mix of a historic museum, art gallery, great garden, restaurant, and music concert venue.

In Jerusalem of old, there was hardly a person who did not know Dr. Ticho, the famous ophthalmologist. The house that the doctor and his wife Anna, the artist, lived and worked in became a museum after his death. It was recently renovated and a visit is guaranteed to be an interesting experience that reveals an important and fascinating chapter in the history of Jerusalem.

Did we say history? Let’s go back to Jerusalem of 1912 which is when Abraham Albert Ticho, who studied medicine in Vienna, arrived. He was an eye specialist and was invited that summer by the organization “Lema’an Zion” to come and work here. His fiancée Anna arrived a few months later.

Dr. Ticho was known for his fight against a terrible eye disease, trachoma, which was rampant among both Jews and Arabs at that time. After working for a short period of time under “Lema’an Zion”, he turned to private practice and moved his clinic to the home he was renting, next to Ha’Neviim Street.

Another important chapter is recorded in the medical history of the home: In 1917 Dr. Ticho was conscripted to the Medical Legion of the Austrian army for two years. With his consent, the home was turned into the first Jewish Children’s Hospital in the land.

The couple bought the home in 1924, they renovated it and split the building into their living quarters on the top floor and a clinic on the ground floor. Dr. Ticho was very well known and respected. His reputation was so renowned that Egyptian military doctors captured in the Sinai battle requested to visit his clinic before their release.

A Lively Household

The house was always teeming with guests. There were doctors and scientists together with artists and writers, Zionist leaders and politicians from all streams. The home was also a meeting place for German migrants to Jerusalem, and professors, writers and philosophers like Martin Buber, Shai Agnon, Henrietta Szold and others would often gather there. The group would sit in the garden, on the wide porch or in one of the living rooms, and would sometimes meet with overseas guests.

One of the regular guests was the writer Shai Agnon, who spoke at the home at Dr. Ticho’s sixtieth birthday. In his great humor he explained that Dr. Ticho dedicated himself to eye treatment to allow for blind people to see his wife’s art.

People and Views

Anna Ticho became her husband’s assistant when he was performing eye operations, and when she was free she would go up to her studio and work there.

She painted the views of Jerusalem and surrounding areas, human portraits, and – at a later stage – also flowers. The most identifiable creative works of Anna are the complex impressions of olive trees and detailed rocky slopes done in ink, charcoal or pencil.

Her portraits of people she come across in the streets when she would wonder throughout the alleyways of Jerusalem or other cities, or of those people who came the clinic. Anna would often give food to the people she would meet, speak to them, and after hearing their life stories, she would ask them to model for her drawings.

Beit Ticho is managed by the Israel Museum, and last year it underwent extensive renovations that revealed extensive drawings on the ceiling that the couple were not aware of.

A visit to the historic home, centrally located in Jerusalem, is an experience saturated with the atmosphere of a Jerusalem of yore: the work room of Dr. Ticho, his collection of Hannuka candelabra (one of the largest collections in the world), the original furniture in the various rooms, the library, the art gallery with Anna’s special art and the temporary exhibitions of leading artists.

The best way to end the tour is with a light meal in the inviting garden restaurant of Beit Ticho which hosts music evenings and cultural events during the week.

The Ministry of Tourism has rated the King David, Dan Tel Aviv, Dan Carmel and Dan Eilat hotels with a 5 star plus standard, Dan Boutique was rated a 4 star hotel.

Tel Aviv White Night

Picnic Chic is the opening event of the Tel Aviv “White Night” celebrations, one of the biggest cultural nights of the year offering amazing events that take place throughout the night across the city including performances, parties, tours, plays and more.

The idea to hold a mass urban picnic is a French concept that was established 26 years ago in Paris to contribute to the value of urban public areas and to the sense of unity in the community.

According to ritual customs, couples who pre-register to participate in this mass picnic event must wear white from head to toe, stock up on a portable table, two chairs, white tablecloth and a picnic basket with a three-course meal.
The venue was kept a secret and revealed literally just an hour before the picnic started.

Participants found themselves setting up their tables on Tel Aviv’s renewed promenade, opposite the vibrantly colorful front of the Dan Tel Aviv Hotel, which has long been considered as one of Tel Aviv coastline’s outstanding landmarks.

You don’t have to go through a lengthy course, or be a professional diver in order to enjoy this experience. You can choose a short introductory dive and enjoy all the beauty and wealth of underwater life that the Red Sea offers. Eilat’s diving clubs are located along the coasts, particularly on the south beaches towards the border with Taba.

Taking it easy on the beach: in the Dolphin’s reef, a recommended spot on its own, you will find “Stalbet Al Hamim” – a delightful pools complex for people over 18. The site offers an escape to “an island of serenity in a sea of storms”, and indeed there this promise is very much kept. The site includes three pleasant pools where you can bath, swim and float, all accompanied by underground music. Out of the water you can rest in one of the lovely sitting areas around the pools, try a Watsu treatment, and most importantly, spend a quiet time together. The whole complex is located in a green, shaded botanic garden. During your stay here you can enjoy a romantic meal, drinks and other vacation treats.

Various street artists perform here among stands offering clothing, ornaments and art, jewelry and much more.
